There are many, many rules to cooking. From “simple” burgers to elaborate dishes.
A new cook was grilling a burger yesterday–and he kept pressing on it with his spatula as all that tasty burger goodness drained out of the bottom, dying with a ssssizzle all over the coals. Chef looked over and admonished;
“Dude. It’s already dead. Don’t smash the meat”
**If you get the chance, see the movie “Chef.” Fun, sweet, funny, and a rather accurate portrayal of much the way we live “the life.” (I was surprised to have found the beefed up John Favreau more likable.)
