SURVIVAL OF THE RETRO-FITTEST

These are the things I have been discussing for the past two years, in bits and pieces, at board meetings, at management meetings, over cocktails, with contemporaries looking for solutions…expressed as completely and concisely as I ever could.

Buckle up…the ride’s about to get bumpy.

For those of you who enjoy my perspective, and are not adverse to committing some additional time to reading–this article is essentially about you as much as it is about “us!”

(Assuming “you” enjoy going out to eat)

Because, incrementally, or maybe drastically on a micro level, your dining experiences will be changing.  It is inevitable.

Once upon a golden-era, restaurants became a haven of creativity and entry-level opportunity for a great many folks with varied levels of aptitude, and the commitment to advance career status and their way of life.  They will soon be, by and large and ubiquitously cookie-cutter, chain driven, eating convenience.  Evolution?
