It has made me laugh, through the years, every time–and it is a recurring theme–that a grill cooks ability, or performance, is praised or “validated” with the comment “Nothing came back.”
In restaurant-speak, that translates to; Since no steaks were returned to the kitchen, the cook must have done a good a job–and got all the temperatures correct.
And though, in the long run, the philosphy is not without any merit at all, what it fails to recognize is this;
Many folks–and I believe most represented by an older clientele–would never send anything back.
Instead, they would finish their meal quietly (or not finish their meal) and then, they would simply not return to the restaurant.
The steak didn’t come back…and neither did the guest.
Just sayin’
