If we insist that the water glasses are full, it demands one simple thing and thereby the intended consequence- That servers are omni-present and constantly visiting the table whilst determining other issues of potential need (more butter?) or, items not needed (a water soaked cocktail napkin?).
Furthermore, as incredible and timely service is only truly achieved through a team concept–staff watching over each other–the keeping of full glasses requires many eyes and hands. It takes a village.
And, of course, the guest notices the constant attention–a FULL glass, not half full–and, the ongoing presence provided by those other than the “assigned” server, while noticing or at least “feeling” cared for and watched over. With plenty of butter, and always a dry cocktail napkin.
And, it is this BASIC premise, that results in so many instances of praise we receive about staff morale, and attention, and teamwork. A most beautiful thing.
