One day I will record, in one place, all of the brilliant things that I have learned from others–the prescient lessons and sayings that say so much–the things that have contributed mightily to the modestly successful place I enjoy. I heard another one just a couple of weeks ago, and, the moment he said it, both the chef and I wrote it down. “Wisdom is the art of knowing what to overlook.” I am sure it is a perspective I might have benefited from if Earl, our operations director had uttered it many years ago. It’s a struggle when one of your mantras is ‘never good enough.’

Father Doug; “Losing your temper rarely elicits the result you seek.”

Chef #1, Chef Eddie Z; “You’ll get it when it’s right. Not before.”
Another one from Earl, and others; “People do what you inspect, not what you expect.”
