If we don’t have enough to teach and train in this ridiculous business, I had to laugh (to keep from growling!) at the story shared by two valued, and wise staff members at the bar last night. Apparently, one of our young food runners was delivering our chicken spring rolls that are typically presented standing on their end. One fell over, as they do from time to time. Before placing it in front of the guest–and being conscientious enough to want it to be presented as intended–the well intentioned teenager stood it back up…with his fingers, before placing it on the table. We only know this because when they did not eat the spring roll, and the server could not gauge why, protocol was followed and a manager was alerted of a potential problem. And the manager was able to glean the offending information. I guess we need to add “don’t handle guests food with your fingers “table side” to the training manual!
