Years ago, the pressure to change menus seasonally was immense. Deadlines, step-by-step processes, testing, tasting, recording, costing, training…
It’s a lot. There is always flexibility on the start date, as, in the words of COBBLESTONES founding chef grinding it out behind the line– “You’ll get it when it’s right.”
The target for the summer menu has always been, “by Memorial day.” (It’s not like there are any local seasonal products, besides seafood, that become available in May!) The fall back position was always, “absolutely must be out by June 20, the first day of summer.”
But, as hierarchy changes occur, as conventions bury us for two weeks, as the neighborhood changes, as new chefs get excited about bigger changes, as priorities shift daily…when the new, summer menu is not ready until the 2nd week in July, what do we do these days? We relax more…we make sure it’s right as always, and… we rename it MID SUMMER MENU! So, come check us out.
