Our eldest daughter just received a promotion working for the HogSalt Group in Chicago–from an assistant restaurant manager at a very busy, coolass Franco-centric bistro-ish “Liquor Bar” (Amazing food and drink), to the General Manager of an even busier, also very cool, lunch-heavy restaurant that belongs to the same group. She observed a major difference recently about clientele and etiquette. In her view, the lunch crowd is in business mode–efficient, polite, professional…a more transactional “goods and services” mentality, whereas at night, folks are both more relaxed, and, more demanding. Less tolerant, more prone to be pushy, rude and privileged. Interesting? I thought so.
